‘Once upon a time’ is a search for the lost dishes – the lost original and traditional tastes. A search for authenticity. A search for excellence. A search for the original. The idea is to preserve the authentic original tastes of the world that originated in different cuisines in different parts on the planet. The world must respect the fact that every authentic taste is cooked for many centuries together before it is established as an authentic taste in the popular psyche in each culture or a community. We must not lose this authenticity. We must preserve the original. ‘Once upon a time’ is a conservation project for the Azad Corporate. This is our gift to our own culture.
